Entree Recipes: Vodka Penne and Salad |

That's Amoré Vodka Penne and Green Salad
An easy and elegant recipe for a romantic evening:4 tbsp olive oil
4 cloves of garlic, minced
Sea or kosher salt to taste
1 28-oz can crushed tomatoes
1 lb. dried penne pasta
2-3 tbsp vodka 1/4 cup heavy cream
Crushed red pepper to taste
Fresh parsley, chopped
Fill a pot with 3 quarts of water and bring to a boil. While the
water is boiling, sauté oil, garlic, and salt in a large heavy sauce
pan. Turn heat to medium low. Cook garlic until golden, but don't let it burn.
Add tomatoes. Simmer mixture uncovered for 15 minutes.
Add penne to boiling water. Cook until penne is "al dente" (take out a
piece, make sure it's got some firmness to it but doesn't crunch) about
1 and 1/2 minutes less than box instructions. It will cook further in
the tomato mixture. Once penne is cooked, drain, rinse, drain
again.
Add vodka to tomato sauce and bring to a boil for no more than a
minute. Reduce heat to medium low, cover, and simmer for 2-3 minutes. Turn down heat to low.
Add drained penne to tomato mixture. Once penne is mixed
thoroughly with sauce, add cream and a sprinkle of crushed red pepper
to suit your taste.
Put pasta in bowls. Garnish with a little fresh parsley (about a teaspoon). Serve with green salad and warm crusty bread.
Basic Green Salad
Buy Romaine, Bibb, red leaf, or some other type of lettuce, but not Iceberg.
Rinse and squeeze dry. Tear into bite size pieces. Even
better, buy yourself a bagged mix of salad greens at the market. Keep some around, because you probably don't eat enough
vegetables. Toss in a bowl with bell peppers and green
onions. Drizzle lightly with oil and vinegar or the salad
dressing of your choice. |
