Chili Con BorisThis is a favorite in the Boris household. Chili gets better after a few days, so freeze whatever doesn't get eaten.
1 tbsp olive oil 1 large white or yellow onion 1to 1 1/2 lbs ground beef (you can use ground turkey as well) 2-3 tsp salt 70 oz canned kidney beans, drained and rinsed 32 oz canned crushed tomatoes 15 oz can tomato sauce 3-4 tbsp chili powder 3-4 tbsp cumin Cayenne pepper to taste
Toppings:Grated cheddar or Monterey jack cheese Sour cream Chopped onion Chopped cilantro Hot sauce
Heat a large saucepan for several minutes over medium heat, add olive oil. When the oil thins out, add the onion, and turn the heat to medium low. Cook for about 5 minutes, stirring occasionally. Once the onions are wilted and translucent, add the ground beef and about a tsp of salt. Cook until the meat loses its pinkness. Add the beans, tomatoes, tomato sauce, chili powder, cumin, cayenne and another teaspoon or two of salt. Turn the heat to medium high. When the first bubbles appear at the top, stir, turn the heat down to medium low, cover, and cook, stirring occasionally for at least 20 minutes (it can cook longer on lower heat). Use toppings as desired. Serves 6 people. |
