Entree Recipes: Chicken and Tomatoes |

This recipe is simple and tasty. Add green or red peppers for a bit for crunch and color to the dish. 2 lbs chicken, legs and thighs or whatever parts you prefer 1-14 oz can of diced tomatoes or 2 tomatoes seeded and diced 1 small onion, diced 3 ribs of celery, diced 1 clove garlic, minced 6 leaves fresh basil or 1 tsp. of dried basil 2-3 sprigs fresh oregano or ½ tsp dried oregano ½ cup of red wine 2 tbsp olive oil Salt to taste
Heat the oil in a medium pot over medium high heat. Add onion, garlic, and celery, cook for 1 minute or until onions are translucent. Add chicken and brown on both sides, about 5 minutes. Add wine, remaining herbs, and tomatoes, reduce heat to medium low. Cover pot and allow chicken to simmer for 30 minutes, stirring occasionally. Serve over rice or with pasta. |
