Dry Rub Chicken Wings
You
can't go wrong with wings for a party. The recipe works nicely on a
grill, can be tweaked for those who like it hot, and is a lot less
messy than Buffalo wings.
24 whole chicken wings, roughly 5 lbs, split (If
you buy fresh wings, split them at the joints and discard the wingtips,
but you should do yourself a favor and buy them already prepared in a
party pack)
BBQ Dry Rub
1/2 cup sweet paprika 2 tbsp ground cumin 2 tbsp mild chili powder 2 tbsp ground black pepper 1 tsp cayenne pepper 1/2 tsp ground cloves
Mix
all the ingredients together in a small bowl. This makes about 1 cup of
rub. You can store this in an air-tight container for weeks. This
should cover twice the amount of wings recommended here.
Preheat
oven to 400 degrees F. Put the wings in a large mixing bowl or on a
baking sheet and sprinkle the spices over the wings and massage the rub
into the chicken. Either using a broiling pan or a baking sheet, cook
the wings for 1hr 15 minutes (or 15-20 minutes per lb if you don't have
a pan big enough). Serves 8 people (as an appetizer). |
