David’s Atlantico Guacamole and Chips
An
example of getting a recipe from a restaurant. David got this from one
of his favorite watering holes and eateries. The chips you can buy:
1 ripe avocado (should feel somewhat mushy to touch, like your chin, but not completely soft)
Juice of 1 lime
1 medium-sized tomato, minced
1/4 red onion, minced
One jalapeno pepper, minced (keep seeds if you like extra heat, discard if you like medium heat)
4-7 stems of cilantro, minced
Salt and pepper to taste
Cut
avocado lengthwise (top to bottom), pull halves apart with gentle
twist. Remove single seed by sticking knife into it, putting avocado in
your palm of one hand, and gently twisting it out with knife in other
hand. Scoop out contents into bowl, don’t get skin in there — it has no
taste and is like getting shell in scrambled eggs. Mash the avocado
with the back of a fork. Add additional contents and mix gently. You
want it to be chunky, not creamy
Serve it with chips or chopped vegetables and a margarita while you prep the rest of the meal
